JAZZ™ apple, peanut butter and raisin granola
INGREDIENTS
- 3 cups rolled oats
- 1 cup roasted peanuts
- 1 tsp kosher salt
- 2 tsp ground cinnamon
- 1 large JAZZ™ apple diced (skin on)
- 1/2 cup peanut butter
- 1/3 cup melted coconut oil
- 1 tbsp vanilla
- 1/3 cup maple syrup
- 1/4 cup brown sugar
- 1 cup raisins
METHOD
- Preheat oven to 160 degrees Celsius
- In a small sauce pot, combine melted coconut oil, peanut butter, and maple syrup. Warm and whisk together until well combined
- In a large mixing bowl, combine all ingredients except for oats and raisins, stir to combine
- Fold in the oats and continue to stir until well coated
- Spread mixture evenly onto 2 baking pans lined with parchment paper.
- Bake for approximately 50-60 minutes or until dark golden brown, stirring every 20 minutes
- Let cool completely then toss with raisins
- Store in an airtight container or sandwich bag. Freeze if would like to save the mixture for longer
