the MONTAGUE tree™ Peach, Watermelon and Feta Salad

INGREDIENTS
- 2 the MONTAGUE tree™ ripe peaches, pitted and cut into wedges
- 2 cups watermelon, rind removed and cut into wedges
- 1/2 cup red cherry tomatoes, halved
- 1/2 cup yellow cherry tomatoes, halved
- 1/2 cup feta cheese, cut into cubes
- 2 tbsp pistachios
- 1/4 cup mint leaves
- 1/4 cup basil leaves
- 2 tbsp balsamic vinegar
- 1 tbsp extra virgin olive oil
- 1 tbsp honey
- salt & pepper to season
METHOD
- Arrange the tomatoes, watermelon, the MONTAGUE tree™ peaches & feta on a platter. Scatter the mint and basil leaves amongst the fruit. Sprinkle the pistachios on top.
- Whisk the balsamic vinegar, olive oil, honey together in a small bowl, season with salt and pepper to taste.
- Drizzle the dressing over the salad and serve.
