INGREDIENTS

  • 2 the MONTAGUE tree™ ripe peaches, pitted and cut into wedges
  • 2 cups watermelon, rind removed and cut into wedges
  • 1/2 cup red cherry tomatoes, halved
  • 1/2 cup yellow cherry tomatoes, halved
  • 1/2 cup feta cheese, cut into cubes
  • 2 tbsp pistachios
  • 1/4 cup mint leaves
  • 1/4 cup basil leaves
  • 2 tbsp balsamic vinegar
  • 1 tbsp extra virgin olive oil
  • 1 tbsp honey
  • salt & pepper to season

METHOD

  • Arrange the tomatoes, watermelon, the MONTAGUE tree™ peaches & feta on a platter. Scatter the mint and basil leaves amongst the fruit. Sprinkle the pistachios on top.
  • Whisk the balsamic vinegar, olive oil, honey together in a small bowl, season with salt and pepper to taste.
  • Drizzle the dressing over the salad and serve.
