INGREDIENTS

  • 6 plums sliced and grilled for garnish
  • 750 ml red wine (1 bottle)
  • 500 ml ginger ale (2 cups)
  • 1 kg plums sliced
  • 40 g ginger peeled and sliced
  • 1 handful fresh mint leaves
  • lime to garnish
  • ice

METHOD

  • Heat a grill plate over a high heat until hot and spray with some oil and grill plums to obtain char marks.
  • Combine the rest of the ingredients is a large glass jug and top with plenty of ice just before serving.
