Butter Lettuce & envy™ Apple Salad with Shallot Vinaigrette
INGREDIENTS
- For the salad
- 1 head of butter leaf lettuce, loosely chopped
- 2 envy™ apples, small diced
- 1/2 English cucumber, thinly sliced
- 1 cup cherry tomatoes, halved
- For the vinaigrette
- 2 tbsp red wine vinegar
- 3 tbsp extra virgin olive oil
- 1 tbsp finely chopped shallot
- 1 tsp Dijon mustard
- 1/8 tsp kosher salt
- 20 turns of fresh cracked pepper
METHOD
- Whisk together vinaigrette ingredients until well combined
- Lightly toss all salad ingredients and desired amount of vinaigrette
