Jazz Apple Crumble Slice

Ingredients

  • 6 Jazz apples peeled and chopped
  • 1 lemon for juice
  • 120 g honey
  • 265 g unsalted butter
  • 290 g caster sugar (1⅓ cups)
  • 1 egg
  • 160 g self-raising flour (1⅓ cups)
  • 2 tbsp milk
  • 200 g plain flour (1⅔ cups)
  • 2 tbsp ground cinnamon

Method

  1. Preheat oven to 180C.
  2. Combine the apples, lemon juice, honey and 1 Tbsp butter in a saucepan set over a moderate heat. Cook gently, stirring often, for 10 minutes until the apples are translucent and the mixture is dry. Set aside to cool completely.
  3. Combine 100g butter and 110g caster sugar in the bowl of an electric mixer and beat with the paddle attachment on high speed for 3 minutes, until creamy.
  4. Add the egg and beat smooth. Fold in the self-raising flour and milk, then press into the base of a lined 28cm x 17cm slice tin. Top with the cooled apple mixture.
  5. Place the plain flour, cinnamon, remaining caster sugar and remaining butter in the bowl of a food processor and pulse several times, until a coarse crumb forms. Sprinkle on top of the apple filling, then bake for 40 minutes, until golden and crisp. Cool in the tin, then slice and serve.
