- Preheat oven to 180C.
- Combine the apples, lemon juice, honey and 1 Tbsp butter in a saucepan set over a moderate heat. Cook gently, stirring often, for 10 minutes until the apples are translucent and the mixture is dry. Set aside to cool completely.
- Combine 100g butter and 110g caster sugar in the bowl of an electric mixer and beat with the paddle attachment on high speed for 3 minutes, until creamy.
- Add the egg and beat smooth. Fold in the self-raising flour and milk, then press into the base of a lined 28cm x 17cm slice tin. Top with the cooled apple mixture.
- Place the plain flour, cinnamon, remaining caster sugar and remaining butter in the bowl of a food processor and pulse several times, until a coarse crumb forms. Sprinkle on top of the apple filling, then bake for 40 minutes, until golden and crisp. Cool in the tin, then slice and serve.
